Avial or aviyal is a popular dish that uses a generous mix of boiled vegetables to attain a yummy recipe. Aviyal is quite prominent in Kerala. Other forms of aviyal preparation are quite popular in parts of Tamil Nadu and Karnataka. The Aviyal recipe forms the part of the Sadya feast; a grand vegetarian fare served on a leaf. Using various aviyal ingredients, you can create a colourful recipe by adding multiple vegetables, coconut oil, curd, curry leaves, etc. You can serve this dish with steamed rice, sambar, pickle or papadoms for a satisfying meal.

  • 2 cups of mixed vegetables like potatoes, drumstick, carrots, pumpkin, raw banana, beans, etc.

  • ½ cup thick yoghurt or curd

  • Water as per need

  • ½ cup Grated coconut

  • 1-2 green chillies

  • 1 tsp cumin seeds

  • ¼ tsp turmeric powder

  • 2 tsp coconut oil

  • ½ tsp mustard seeds

  • ½ tsp cumin powder

  • Few curry leaves

Steps you need to follow for making Aviyal


  • Use a thick bottom pan, add chopped vegetables and pour sufficient water enough to cover the vegetables.
  • Add turmeric powder and heat on medium flame until the vegetables are cooked well.
  • Meanwhile, make a thick paste of coconut and cumin seeds along with chillies.
  • As the vegetables simmer on a medium flame, add the coconut paste.
  • Add salt to taste and cook the mixture until it begins to boil. 
  • Remove from heat and add curd. Whisk to avoid curdling of the same.
  • In a small pan, heat coconut oil and add mustard seeds and cumin seeds. Add fresh curry leaves. 
  • Add the above to the Aviyal recipe and mix well.
  • Serve hot along with rice or with Adai.

Coconut oil is crucial to the Aviyal dish. Hence, it is important not to replace the same. Use a small quantity of each veggie, and all of these will add up to the final quantity. If you feel that the final version is too runny, add rice flour and water to the Aviyal recipe. The same works well when the curd looks curdled after adding the veggies.


While following the Aviyal recipe, cook the vegetables in the right way. The aviyal preparation must include all veggies cooked tenderly and must not be mushy.
