  • Basmati Rice – 1 cup

  • Ghee or Clarified Butter – 2 tablespoon

  • Onion (thinly sliced) – 1 (medium-sized) – optional

  • Water for Indian cooker – 1¾ cups (2 cups for normal pot, 1¼ cup for Instant pot)

  • Green Chilies (slit or chopped) – 1

  • Salt (as per taste) – ½ teaspoon

  • Cashewnuts (Kaju) – 14 pcs

  • Raisins – 14 pcs

  • Cinnamon (Dalchini) – 2 inch

  • Cloves (Laung) – 4 pcs

  • Green Cardamoms (Elaichi) – 3 to 4 pcs

  • Mace (Javitri) – 1 strand

  • Star Anise (Chakri Phool) – 1

  • How to prepare Ghee Rice?
  • Wash 1 cup of rice until the water is clear. Soak it for at least 20 to 30 minutes. Drain the water and set it aside.
  • Slice 1 medium onion thinly and slit 1 green chilly as the rice soaks.
  • 2 tablespoons ghee, heated in a pressure cooker or a saucepan
  • Fry 14 cashews till gently browned, and then whisk in 14 raisins.
