Rice Flour- 2 cups

- Take a pan and heat a pan with 1 tsp ghee.
- You can also use poppy seeds which can be optional.
- If adding poppy seeds, take 1 tbsp and fry them on a low flame for half a minute.
- Now add grated fresh coconut to the pan.
- Add one cup of jaggery. If you wish to keep it less sweet, you can tone down on jaggery and add only ¾ cup.

- Cook on a medium flame while lightly stirring it.
- Cook until all moisture from the mix evaporates, and the mixture dries up.
- Adding nutmeg and cardamom is completely optional at this stage.

- Pour one cup of water into a pan and add one teaspoon ghee and a pinch of salt to it.
- Heat it until it starts boiling.
- Turn the flame to low and quickly add flour to it and mix it well.
- The flour will become lumpy.

- Once the flour cools, get the steamer and a basket ready.
- Grease them well or spread a muslin cloth on its surface.
- When the dry and crumbly mix is slightly warm, transfer it to a bowl.
- Use warm water to sprinkle and knead the dough.
- Knead until it is smooth and crack-free.
- Divide the mix as per mould size.
- Knead each ball until soft and cover them with a moist cloth.
- If not using a mould, press your finger in the middle of the ball and make a dent in the centre.
- Ensure the edges are thinner than the centre.
- Place 1 to 1 ½ tsp of jaggery mixture.
- Close the ball and pinch off excess dough.
- Bring the pleats together, give it a shape, and pinch off neatly.
- Cover the modaks in a muslin cloth.
- Take 2 cups of water in a steamer and put it on a medium flame to boil.
- Grease the steam basket so that it doesn’t stick at the base.
- Sprinkle some saffron over the modaks and steam for 10 minutes.
- After 10 minutes, shut off the gas and let it rest for a while.
- You can make fried modak using the fried modak recipe replacing steaming with frying.
- Serve steamed modak to Lord Almighty and the guests.
